Smith & Clay – UK

Smith & Clay occupy a site in the centre of Buckingham which has contained a butcher’s shop and an abattoir for many generations. It was purchased by Margaret Behan, owner of the well-known and award winning Brackley Butchers. The building is listed and Margaret’s vision was to maintain the age and provenance of the historic site opposite the old Buckingham jail, while creating a modern and sleek butchery and deli, above which will be student accommodation.

Criocabin’s and CRS were the sole fit out contractor for all of the retail and butchery preparation spaces, and many months have been spent working with the client to refine designs and layouts for the shop.

The new busy shop contains 4 multideck, a dry ager, hot counter, rotisserie, 10m of serve over counter run and 4 cold stores as well as the 7 student apartments above. Front of house works feature a square glass Criocabin Enixe counter run with a 45-degree chopping block section.

There is a bespoke dry aging Criocabin Genesis cold room behind the counter and a 1250 cm and 937 cm integrally engineered Criocabin Ethos multideck.

Through the sausage display window behind the butchery is the ‘chop shop’ where the butchers can be seen prepping the meat. This is a temperature-controlled environment.

The deli area features a Criocabin Enixe corner, hot counter and rotisserie. CRS installed two remotely engineered Criocabin Ethos multidecks, a 937 and an 1875.
