It is now evident today that butcher shops are increasingly turning into real modern, multi-purpose shops. This change meets the growing demand for more complete purchasing experiences, allowing customers to find not only fresh meat and pre-prepared products but also cold cuts, deli products and, in many cases, ready meals, which are also pre-cooked. Keeping up with this trend requires a modern vision, one that is not so deeply rooted in the concepts of traditional butchery. It requires a desire to experiment with new methods, processing and cooking, acquiring techniques and the skills to best organise the retail space with the aid of a crucial ally: technology that combines innovation with aesthetics.
The two young entrepreneurs, Alessandro and Lorenzo Apolloni, have successfully reinterpreted the butcher’s trade with the support and collaboration of Tecnohotel Sas and Criocabin for the production of refrigeration counters.
More precisely, the MAX MF display counter with a lift-up glass canopy features the G-Concept refrigeration system with a built-in heat exchanger and dimmable CRIOLED lighting. The WOW Touch Control electronic control system with NUCLEUS allows remote control via Wi-Fi.
The Criocabin set-up for Bottega Apolloni also included a MAX MF 450 with a lift-up glass canopy, in a ventilated heated version for the ready-to-go section and a MAX Tower with black screen-printed Thermopane glass panels, hinged opening glass front panels and sliding rear panels, with ventilated refrigeration in Climate class 3-M1.
