EDB, our meat dry-aging cabinet, complies with the new Regulation (EU) 2024/1141. Its performance has been enhanced thanks to the following updates:
1. UVC Lamps for Bacterial Load Reduction
- UVC lamps do not completely sterilize the environment but significantly reduce the presence of pathogens such as Salmonella, Listeria, and E. Coli.
- Beneficial bacteria and molds, essential for the ageing process, can still develop in a controlled manner.
- Increased safety thanks to constant sanitization of the dry aging environment.
2. Optimised Ventilation
- New advanced systems ensure uniform air circulation across all shelves.
- Dedicated electronic control monitors temperature and humidity, ensuring stable parameters for high-quality dry aging.
